Smoky Chipotle Salad

Serves 2

  • 2 turkey breasts

  • a cucumber

  • an avocado

  • a pack of asparagus

  • a small tub of creme fraiche

  • 2 limes

  • Chipotle cholula/chipotle paste

  • 3 spring onions/crispy fried onions

  • Sriracha

I find the easiest way to serve this is on a big serving plate. Then people can help themselves to the bits they want. It normally has griddled romaine lettuce hearts, but I forgot them at the shop!

I barbecued two turkey breasts that I marinaded in the juice of a lime and its zest, a tbs of olive oil and salt and pepper.

I served them with perfectly ripe avocado, some pan fried mushrooms, smokehouse almonds (available in a little red packet at Tesco), griddled asparagus and fresh cucumber.

In the middle is a bowl of creme fraiche with a squeeze of one lime and a splash of Cholula chipotle sauce, you could also use a tsp of chipotle paste if you can’t find any Cholula.

Finally I squirted some sriracha to add some heat and topped it with lots of fresh spring onions! Some crispy fried onions would have been amazing but they too were in the bag I left at the checkout! Another great addition to this recipe would be my Mexican sweetcorn salad which is also on the site.
