FISH Asian Grilled Shellfish

3 cloves garlic, minced

  • 2 tablespoons minced fresh ginger

  • 180ml toasted sesame oil

  • 80ml lime juice or rice vinegar

  • 120ml soy sauce

  • 2 spring onions thinly sliced

  • handful of freshly chopped coriander

  • 1 thinly sliced red chilli

  • King prawns, brown shrimp and squid

First make your dressing so that once all the fish is cooked and hot it is ready to serve.

In a jar shake together all the ingredients except your shellfish and squid.

Griddle your prawns first on each side until blackened and cooked through (about 4 minutes each side), then place in the platter. Then add your squid to the pan, and cook for a minute each side till all of it has turned completely opaque, and the brown shrimp and cook for a further minute. Put all of the fish on the platter.

Place the dressing in the middle of the platter and season the whole dish with salt and pepper.

Serve and enjoy. X
