Cod & Chorizo with Courgettes

Serves 2

  • 1 yellow courgette sliced

  • 1 green courgette sliced

  • 4 courgette flowers

  • 1 chorizo sausage thinly sliced (I like mine quite smokey and spicy, the tesco’s one is great)

  • 2 jarred roasted red peppers thinly diced

  • a handful of cherry tomatoes halved

  • 2 cod fillets

  • 1/2 tsp chilli flakes

  • 1/2 tsp smoked paprika

  • juice of a lemon

  • olive oil

  • 2tbs fresh mint thinly chopped

  • salt and pepper to season

In a large frying pan (make sure it has a lid or a plate big enough to put on top) fry off the chorizo until nice and crispy and set aside. Add all your veggies and spices to the pan and cook for about 4 minutes, turning every minute or so. Place your fish in the middle of the pan with the veggies around the edge and cover for 3 minutes. Open the lid and carefully turn the fish, being careful not to break it. Cook for a further 2 minutes with the lid on until just about cooked through (the fish will carry on cooking while you are serving it)

Add the juice of a lemon to the pan, along with the chorizo, a drizzle of olive oil and the fresh mint and serve.
