Miss Mimi’s Pasta

In a baking tray mix together

One Pack of chicken strips

A bunch chopped mint

Half bunch chopped parsley

2 cloves crushed garlic

One chopped red chilli

Three spring onions thinly chopped

Zest from one lemon

One chopped courgette

4 big tomatoes quartered

Lashings of olive oil

Mix with lots of salt and pepper

And cook at 185C for 15 mins.

Cook macaroni in vegetable stock for 12 mins and drain.

Combine the pasta with the now cooked chicken mixture, toss all together add more salt and pepper to taste. Top with fresh mozzarella.
