Beetroot and Horseradish Dip
One 250g pack of sweet pickled baby beetroot (I like the Waitrose one and the M&S one for this recipe)
3 tbs of cream cheese
3 tbs creme fraiche
1 tbs horseradish (more or less taste)
Put all of the above ingredients in a blender until smooth. To serve add crumbled feta and walnut pieces over the top and a generous drizzle of olive oil
