Spring Veg Soup

One chopped white onion , Two chopped courgettes, 2 handfuls of spinach, one small handful of mint leaves, 3 cups of garden peas, 1 large tablespoon of Bouillon, 1 and a half pints of water. I put this all into my soup maker, it steamed it for 15 mins and then whizzed it. (I bought my soup maker last week from Lidl for £39.99, the brand is Silvercrest. I’m absolutely in love with it!) When it finished whizzing, I added half an avocado a tablespoon of crème frâiche and lots of salt and pepper. I then blended it again for one minute. To serve I added a small dollop of crème fraîche and a scattering of pumpkin seeds. This is such a great way for of getting rid of all that leftover veg in the fridge reducing the amount of food you throw out each week!
