Honey and Cumin Roasted Chicken Thighs

Quarter two bags of carrots lengthways and place in large roasting tray with a little olive oil, some honey and two tsp of cumin seeds. Sprinkle with salt and pepper and roast in oven at 200•c for 45 mins. After this shove them to the side and place chicken thighs on the side of the roasting tray. Season with S&P and drizzle with honey and lemon zest. Cook for a further 45 mins. Boil Kale, place carrots and chicken on top. Then scatter with avocado and diced cucumber. Dollop crème frâiche around it all, and drizzle with honey and mustard dressing.
