Potato, Celeriac and Bacon Croquette Fritters

Potato and celeriac mash

  • Pack of bacon lardons

  • 2 eggs

  • Parmesan

  • A bunch of parsley

  • 4 bags of walkers crisps

  • Salt and pepper

  • Oil for frying

Honestly these were heaven on a plate! I used left over potato and celeriac mash from the fridge and added a pack of bacon lardons, 2 eggs, a generous shaving of Parmesan,  a handful of fresh parsley and lots of freshly ground black pepper. I then rolled them into balls and flattened them onto crushed walkers crisps and shoved them in the freezer for half an hour before frying on each side in oil on a medium heat until golden and warmed through (about 3 minutes each side)
