Miss Mimi’s Super Seedy Pistachio Loaf

Mix the following in one bowl…

300g of oats

2tsp baking powder

2 handfuls of mixed seeds (pumpkin, sunflower, flax and linseed)

1/2tsp salt

100g of shelled pistachios

In a separate bowl mix together the following…

One 500g tub of organic low fat yoghurt (I like the duchy one)

1tbs black treacle

1 egg (Burford brown of course)

Mix until completely combined

Then combine the two of them and put in a lined loaf tin.

Sprinkle the top with more seeds.

Cook at 180C for 30 mins then at 150 for another 30.

Once cool, store in an airtight container in the fridge for up to 1 week or freeze for up to three months.
