Miss Mimi’s Gooey Granola Flapjacks

 

INGREDIENTS

125g Rolled oats (do 150g of rolled oats if you have a nut allergy, and don’t use granola)

125g Lizi’s granola (or a granola of your choice)

125g Light brown Demerara sugar

125g Butter

7 tbsp Golden syrup

2 handfuls of sultanas (optional)

 

Preheat oven to 180C

Melt the butter and sugar in a large saucepan, until sugar has dissolved. Add all the other ingredients and stir until well combined. Flatten into a square cake tin lined with baking parchment (not tin foil like I used as it results in chaos!), then cook in the oven for 15 minutes, until the top is nice and golden and the middle is still a bit squidgy.

Put in a cool place to cool completely before removing from the tin and cutting into squares. I like mine to be lots of different shapes and sizes so that people can chose the piece they feel like.

The great thing about this recipe is that you can add whatever you feel like just take out some oats and swap in with nuts/seeds/chopped dried fruit…whatever you wish.
