Roasted Veg and Chicken Salad

Salad of spinach and baby gem, with some sliced chicken breast, roasted asparagus and then lots of baby peppers roasted in the oven at 180 for an hour. They were stuffed with cherry tomatoes, a little chopped anchovy and some chopped basil stalks. Drizzle with lots of olive oil and a good grind of black pepper. They make a delicious dressing for the salad themselves, but I add olive oil with a splash of Maggi seasoning and a squeeze of a whole lemon! This has to be one of my faves!!! You could also do this with chorizo or/and king prawns, I think that would be delicious too.
