Pea, Courgette & Mint Soup

Serves 4 very hungry humans!

  • One white onion roughly diced

  • olive oil (or oil of your choice), knob of butter

  • Bouillon

  • 3 chopped courgettes

  • 6 cups of petit pois

  • Salt and pepper to season

  • Optional: feta, chilli flakes, soy roasted pumpkin seeds

Fry off onion in a little olive in a large saucepan until soft and translucent. Add three tbs bouillion, and a knob of butter (optional) and stir for 30 seconds.

Add courgettes and petit pois. Add water till the saucepan is nearly full and one chopped sprig of mint. Simmer till courgettes are soft (around 10 mins), then blend with a hand blender or shove in the magimix.

Add lots of pepper, and salt to taste.

Top with crumbled feta, chilli flakes if you have them (in this case I had let myself down!), and soy toasted pumpkin seeds.
